The Ultimate creamy and comforting tomato soup

 

This soup conjures up memories of family winter walks and picnics out of the boot of the car, steaming tomato soup poured out into tin mugs, and cheese sandwiches to dunk into it. This version has all the comfort and flavour without any added nasties!

PREP


  • Preheat oven to 170 degrees Celsius.

  • Halve the large vine tomatoes and place into roasting tin along with the cherry tomatoes. Drizzle tbsp of extra virgin olive oil over the top, coat and then roast in the oven for an hour and a half, or until they are very slightly charring at the edges and they smell beautifully rich.

  • Soak the raw cashews in boiling water for 20 minutes to allow them to soften.

COOK


Prepare some cashew paste by draining the soaking cashew nuts, adding 150mls of your milk of choice. Use Nutribullet or other high speed blender to form a smooth, slightly loose paste.

Dissolve one stock cube in 200mls of boiling water.

Once the tomatoes are ready add them to a high speed blender along with the vegetable stock and 1 cup of the cashew paste. Blend until completely smooth and combined.

Pour the soup into a pot and bring to a simmer. Allow to simmer for five minutes before serving. Season to taste with salt and cracked black pepper.

TIPS


Serve with toasted sourdough or crunchy toasted rye bread fingers.

I like to use Plenish coconut milk or cashew milk for this recipe, and I recommend Kallo low salt vegetable stock cubes.

Keep the remaining cashew paste and use to thicken curries or make a pasta sauce by adding nutritional yeast, dijon mustard, garlic powder, salt, pepper, and more milk to loosen.

You can roast the tomatoes ahead of time when you have the oven on to make other meals, that way keeping electricity usage down and saving time.

1.2kg vine tomatoes

200g cherry tomatoes

3 tbsp extra virgin olive oil plus extra to drizzle

200g raw cashews

1 stock cube

150ml milk of choice

Cracked black pepper and sea salt
